Cinnamon Rolls

I have a daughter who is allergic to eggs, dairy, nuts and some non-food items. I started this blog to share some recipes. Questions are welcome, and I hope that other's lives can be made easier by the trials we have faced.

Here are cinnamon rolls!

Cinnamon Rolls
Dough:
1 - .25 oz. pkg dry yeast
¾ c warm water 115°
¼ c cane sugar
1 tsp. salt
1 egg (OR ¼ c. applesauce or egg replacer if egg allergic)
2 ½ c bread flour + some for kneading/rolling
Cinnamon Filling:
¼ c vegan margarine softened
½ c brown sugar packed
1 tbsp. cinnamon
1/4 tsp salt
Icing:
1 c confectioners sugar
¼ tsp vanilla extract
2 tbsp milk (OR soy/rice milk)

  1. In a small bowl or cup, dissolve the yeast in the warm water, let stand for about 10 minutes until it becomes creamy.
  2. While the yeast is standing and in a large bowl, mix sugar, salt, egg (or applesauce), 1 c bread flour. When yeast is ready add to this mix, and gradually add in the remaining flour, beating with mixer after each addition. (I used the dough beater attachment.) Dough will pull together, once this happens, knead it in the bowl to gather remnants off the sides of the bowl, then turn onto a lightly floured mat or counter. Knead about 5-7 minutes or until smooth and elastic, sprinkling with flour as needed. Then place in a bowl and cover with a damp cloth to let stand for 10 minutes.
  3. Lightly grease an 8x8 pan.
  4. In a small bowl, mix the filling ingredients. Set aside.
  5. Roll the dough out to ¼ inch thick rectangle. Smear the soft butter over the dough, and then sprinkle with the filling mixture. It will seem like a lot!
  6. Roll the dough from the longest side to form a long roll.
  7. Slice the dough into 16 (or so) even slices (string works well to cut, but a knife is ok too, these do not have to be perfect). Place each slice cut-side up into the pan so they touch.
  8. Let rise on the counter  1 hour or cover and put in the fridge overnight so you can have them fresh in the morning.
  9. Bake at 400° for about 20 minutes, or until golden brown.
  10. Make the icing by mixing the ingredients with a whisk or fork. Drizzle over warm rolls and enjoy.
